Oh, what the hell, I'll bite:

Easy top 2:
Firefly
Babylon 5

honorable mentions:
Trek (original and Next Gen, nothing after.)
The Muppet Show

I'm sure I've forgotten some, but I think I'll keep it short.

Very little of television stands the test of time very well. because our cultures change, but past TV shows don't.
Something that was topical before often becomes trite today.

ALOT of stuff I enjoyed in the past has become stuff I cannot stand, and actually revile.

However there are some shows I find myself returning to, when I see them re-broadcast:

WKRP in Cinncinati
Star Trek
Military/Historical documentary shows.
Tour of Duty
JAG

Here's one I forgot: MR. BEAN!!!

Right now I'm really into 24 and Smallville. Very well written shows both of them.

Other favourites would have to be:
Dr Who (Tom Baker era)
Simpsons
The X-Files, before it got uncontrollably daft
Spaced, a truly bizarre UK comedy show. Very very funny.
Red Dwarf, before it went down hill.

For me, the sitcom achieved perfection with The Dick Van Dyke Show. Hilarious writing and brilliant comedic actors. Everything else is a pale shadow in it's wake.

The Twilight Zone (the originals... and maybe one or two episodes from the 80's)
Cheers
Law & Order (the originals, up through about season 6...)

Brit-coms anyone?
Black Adder
Coupling (seasons 1 - 3)
Father Ted
Vicar of Dibley

Not funny, but British -- Cracker with Robbie Coltrane.

Animation?
Cowboy Bebop
Simpsons
Rex the Runt

And I have to say, though unintentional, 24 is the funniest show on television. I know it's supposed to be a really tense and nail-biting thrill ride, but the situations and character interplay have gone so far off the deep end it's outright laughable.

Deadwood -- Ooh! I've just started watching the first season on DVD. One of the best looking shows I've ever seen, and the cast is fantastic. Ian McShane is one scary motherf@#king c#cksucker! (Pardon the language -- the old-timey swearfest is music to my ears.)
